Pakbet Dagupeña

PAKBET DAGUPEÑA (A Stew of Vegetables, Northern Philippine Style)
Serves 4

Ingredients:

Cooking oil   30 ml/2 Tbs
Onion, diced 50 g/2 oz
Tomato, diced 150 g/5 oz
Shrimp paste 6 g/1 Tbs
Chicharron  75 g/3 oz
Aubergine, cut into batonnets  200 g/7 oz
Squash, cut into 3 cm/1 in. cubes  100 g/4 oz
Ampalaya (bitter gourd), cut into batonnets 100 g/4 oz
Okra  100 g/4 oz
Finger chilli 1 piece
Stock/water 250 ml/1 cup
Salt and pepper as needed

Procedure:

  • Heat the oil and sauté the onion, tomato, shrimp paste, and chicharron.
  • Add in the stock, aubergine, and squash. Bring to a boil and simmer until the squash is soft.
  • Finish the stew by adding the okra, ampalaya, and finger chilli. Continue cooking until the okra and bitter gourd are cooked but still bright green.
