Tocino

TOCINO (Sweet Pork)
Serves 4

Ingredients:

Pork shoulder or pork belly, cut into thin strips 600 g/1 ⅓ lb
Coarse sea salt 10 g/1 Tbs
Freshly ground pepper 2 g/1 ½ tsp
Sugar  50 g/2 oz
Garlic, minced 30 g/1 oz
Spanish paprika 3 g/4 tsp
Pineapple juice 250 ml/1 cup
Achuete oil 45 ml/3 Tbs
Cooking oil for frying  as needed

Procedure:

  • Mix the seasonings and spices in a bowl and add the pork.
  • Add in the pineapple juice and then the achuete oil. Marinate overnight and then drain.
  • Portion into 200 gram/7 oz packages. Wrap in parchment paper and store in the chiller or freezer for future use.
  • To fry, coat a pan with cooking oil. When the oil is hot, add the tocino, flipping them when each side is cooked.
